Co-founder Roger Lolly will lead the strategic growth initiative, which aims to introduce the brand's unique concept to broader audiences in Orlando, Jacksonville, Naples, and North Port.

Each new restaurant will feature a 2,800-square-foot dining room designed to capture the essence of Old Florida, complete with reclaimed cypress bars, antique postcards, and taxidermy displays. A distinctive highlight will be the 500-gallon freshwater tank housing live baby alligators, part of an educational partnership with the Florida Fish and Wildlife Conservation Commission.

The expansion represents more than just culinary growth. According to co-founder and CFO Louis Cioffi, each new location will be a $1.6 million investment, creating 35 to 40 jobs ranging from line cooks to general managers. The company's menu will emphasize locally sourced ingredients, including 100 percent chuck-and-brisket patties and a planned transition to fully Florida-raised beef by late 2025.
